Cheesy Cauliflower Breadsticks
On a rainy fall night, these breadsticks rocked my world! What a treat!!
1 – 1 1/2 raw head of cauliflower
3-4 eggs, raw, beaten
3 cloves of garlic, minced
1 tbls of Oregano
1 tbs of salt
1 tbs pepper
3 cups of Asiago/mozzarella/Parmesan cheese ( you can pick one or combine)
Preheat oven to 425 degrees. Grind the cauliflower in the blender until it is fine. Place into glass mixing bowel or one that is microwave safe. With saran wrap over the top, microwave it for 10 minutes and drain excess water. Once it’s done add it to the egg, garlic, oregano, 2 cups of cheese, salt and pepper mixture. The texture should be like dough.
Greece up the pan. Separate the dough into two large balls and flatten them out. Place the pan in the oven for 25 minutes. Take out and add the last cup of cheese on the top of the dough. Bake again for 5 minutes.
Let cool and then cut into strips. Purchase good quality marinara sauce to go with it! Eat right away when it’s warm….so good!!! Enjoy!
